My husband and I had this delicious baked eggplant dish with tomato salsa and feta cheese while visiting his aunt and uncle on our most recent trip to Sweden. It was so good that we couldn’t wait to try and recreate it at home! Luckily, our garden had produced a couple of ripe eggplants and lots of tomato’s, perfect for the recipe!
